Built around a 500° forno in the heart of Alsager — Italian cooking, made the way it was meant to be.

Dough is proofed for thirty-six hours, hand-stretched, then cooked in ninety seconds on a glowing stone floor at five hundred degrees.

We source what matters from Italy — the flour, the tomatoes, the cheese, even the yeast — and finish everything by hand in the dining room.
